A simple way to measure success is what you mentioned:
Take your page’s Talk About This metric and divide it into your total page Likes. This will give you a percentage. Aything around 5% is average, while a good target to aim for is 10% and over.
But this is an over-all measure.
Try and see what engagement you get with each post as well. Things to look out for are the type of post (written, photo, question, video) and also what subject matter you are talking about.
I would start measuring numbers over time. That way you can see if you are doing better or worse and what worked and what didn’t.
You can esily use Excel or Google Spreadsheets to keep track of your own numbers.
