Good question!
After having experienced a catastrophic data loss once, I definetely go with BackupBuddy. Two reasons: 1) Auto-backups of your installation files AND the database. 2) The possibility to migrate (it actually works!) and restore your full site. It’s a little like AkeebaBackup for Joomla. The downside is that it’s not free, but having rebuilt a site from scratch once…

I love Editorial Calendar. Instead of organizing your posts in list form, as WordPress defaults to, Editorial Calendar shows them in a monthly calendar format. You can quickly drag-and-drop blog posts to different dates.
I manage a lot of our clients’ blogs, and this plug-in is a lifesaver for me.
I also like Viper’s Video Quicktags — makes it super-easy to post videos from YouTube, Vimeo, and many other services without messing with embed code.

It’s not a plugin but it looks like a great tool to help you manage multiple WordPress sites. It’s called ManageWP. Has anyone heard of this and/or used this?
